    Title: 以Micorwave-assisted extraction進行石蓴色素萃取之研究

    Abstract: 石蓴含高量碳水化合物與礦物質,以及極少量蛋白質與脂肪,意含多活性物質,具有降血脂、改善腸內菌相、與抗凝血效果等功能性,舉有海藻之特殊香味及顏色。本實驗採取micorwave-assisted extraction方式,並以要用酒精為萃取溶劑進行石蓴色素之萃取。石蓴色素的萃取能量可由I值越大則表示萃取效果越佳。在所有測試的石蓴酒精萃取色素中,分別以100mL的95%酒精萃取1%之100mesh石蓴,100mL的95%酒精萃取1%之60mesh石蓴,與200mL的95%酒精萃取1%之100mesh石蓴,所得知I值分別為0.72、0.53及0.42有較佳表現。所得石蓴酒精萃取容易即可作為原料應用於化妝品和食品添加物。
